
Mini Appelstrudel
A lovely treat for the colder months of the year, this applestrudel, or Apfelstrudel in German, with its beautiful seasonal spices is best eaten warm with a vanilla custard or just pure as it is.
Ingredients (2 -3 strudels):
- 2 apples (any kind is good, I personally prefer Breaburn)
- juice and zest of 1/2 unwaxed lemon
- 3 tbsp maple syrup
- handfull of chopped pecan nuts
- cinnamon, nutmeg and allspice
- 6 filo pastry sheets
- 1 tbsp of melted butter
Method:
- Preheat the oven to 180 degrees Celsius
- Peel and deseed the apples then cut the apples into small cubes
- In a bowl, combine all the ingredients and spices
- Brush the melted butter carefully onto the filo pastry sheets.
- Depending on the amount of strudels you want to make, use 2-3 sheet per strudel.
- Add one or two spoonful of the apple mix onto two (or three) filo sheets, than carfully roll them into small parcels, making sure the apple mixture can't escape.
- Place onto a non-stick baking tray and bake at 180C for about 20 mins or until the filo pastry turns light golden.
- Take out of the oven and sprinkle with icing sugar or vanilla custard.
- Tuck in and enjoy
